Right now, my 6-year-old is very interested in learning kitchen skills. He very sweetly told his Dad, “You know why I want to learn to cook? Because Mama is cooking all the time. And I really like to help. And I can help her a lot if I do some of the cooking.” Whatever his personal motivation was today, it’s important to me that both of my boys know how to cook and grow to be self-sufficient in the kitchen. So when my son said that he wanted to learn how to make muffins, we made them.
This following is a recipe I made up years ago, and it’s always a delicious fallback when we want quick and easy muffins.
Grain-Free Coconut Muffins Recipe
6 Eggs
4 tablespoons Coconut Oil
¼ – ½ cup Maple Syrup, to taste
½ teaspoon Salt
½ cup Coconut Flour
Mix all items thoroughly (I mixed them in my food processor, though a mixer or combining them by hand would also work).
Pour batter into 12 prepared muffin cups (either grease heavily or use baking cups).
Bake in preheated 350-degree oven for 25 minutes, or until thoroughly cooked.
NOTES: Because my 6-year-old did most of this process on his own, we added everything to the food processor and he pulsed it a few times to mix the batter; using a mixer or mixing by hand would work just as well. Today, he prepared our muffin tins by lining them with parchment paper liners. Otherwise, coconut oil works well.
