Vegan, Grain-Free Brownies Recipe

On birthdays in our house, the birthday celebrant gets to choose whatever (s)he wants to eat that day. For my son’s 6th birthday, one of his requests was brownies.

I’m pretty sure that this recipe originated with The Spunky Coconut, though I’ve modified a bit over the few years we’ve been making it. At the time we started making it, I needed to accommodate both grain-free and vegan sensibilities. If you find yourself in need of doing the same, this is a great recipe to try. It is extremely chocolately, as I think all brownies should be, and everyone enjoys them whether or not they have food restrictions. Those who haven’t had a brownie in years due to food sensitivities of one kind or another will love them.

Vegan, Grain-Free Brownies Recipe

Ingredients:
½ cup + 2 tablespoons applesauce
1 cup almond butter
¼ teaspoon salt
¼ teaspoon liquid stevia
¼ cup coconut sugar
¼ cup + 3 tablespoons cacao powder
¼ cup chocolate chips

Beat all ingredients with an electric mixer (a stand or hand mixer).

Scoop into a greased, square cake pan. Spread it out with wet hands or a spatula.

Bake in a preheated oven at 325 degrees for about 30 minutes.

Allow to cool completely before cutting.

Serve and enjoy.

    I want to try this! What do you think I could substitute for the applesauce? Ryan doesn’t do apples right now. Do they make pear sauce? 🙂

    • I think substituting for the applesauce would be fine. If no one makes a pear sauce, you could always make some by pureeing it until smooth in a food processor (or a high-powered blender, if you have one). I’m guessing you could also soak prunes in water over night, and then puree them smooth for the same effect.

      • As I’m thinking about this, I bet you could also soak dates overnight in water, puree the soaked dates until smooth, and then use them in place of the applesauce. If you do that, you could probably leave out the stevia, as dates have a lot of sweetness on their own. I’m totally going to try this next time. 🙂
