Green Lemonade Slushie

Green Lemonade SlushieThe other day, I took my boys to the County Fair. While we were there, especially as the day got warmer, we saw lots of people drinking slushies. My boys were fascinated by these bright-colored beverages.  I didn’t want to buy a fair slushie drink. The day-glow colors told me that they were full of artificial colors, and they were likely loaded with corn syrup too (which would make my little guys break out in a serious rash).… Continue reading

Greens Cake: A Mixed Greens Side Dish

Greens Cake: A Mixed-Greens Side Dish RecipeWe’ve been eating a lot of braised greens lately (Garlic Braised Greens (recipe HERE), Braised Greens with Cranberries (recipe HERE), Eggs over Braised Greens (recipe HERE), and so on). Eggs over Braised Greens

This is also the perfect way to use leftover Garlic Braised Greens (recipe HERE) or leftover Braised Greens with Cranberries (recipe HERE), if you have them on hand.… Continue reading

Green Piña Colada Smoothie

Green Piña Colada Smoothie RecipeWith today’s sunny weather, my boys and I were happy to sit on the deck and enjoy a drink in the sunshine. We don’t have a beach near by, but this drink brought the tropics to our Rocky Mountain home.

It’s full of tropical fruity goodness, including bananas, pineapple, and mango. It has a dose of healthy fats from the coconut butter, which in addition to coconuts many health benefits also lowers the overall glycemic index of the drink.… Continue reading

Braised Greens with Cranberries

Dark leafy greens are so wonderfully healthy that I try hard to incorporate a good amount of greens into our daily diet. I find myself adding them to just about everything: smoothies, eggs, ice pops, fruit leather, stir fries, casseroles, and so on. But sometimes greens deserve the spotlight all on their own, especially when they’re in season and especially delicious.… Continue reading
