My two boys eat pretty much every two hours from the time they wake up until the time they go to bed. It’s not that they don’t eat at meals (well, most of the time). They do eat meals; my 6-year-old sometimes eats more than I do. It’s simply that they’re growing so much that they’re constantly hungry.
As a result, I’m always looking for simple, healthy snacks to keep on hand. In our house, we try to keep our consumption of processed foods to a minimum, so snacks are things that we can grab or make easily.
Celery with peanut butter is sort of a classic snack. There’s nothing very flashy about it. It’s not new or different. But we hadn’t had it in a while, and when I pulled it out, both of my boys devoured it. Devoured it, meaning we went through two bunches of celery and an entire jar of peanut butter in less then one day. And once that was gone, my 6-year-old begged me to take him to the market so we could buy more celery. So we went and bought two more bunches, along with another jar of peanut butter. I’m curious to know if they’ll last more than 24 hours.
Celery and peanut butter make a perfect snack. It’s a healthy mix of vegetables, plant-based proteins, and fats, so your blood sugar won’t spike and drop. It has no added sugar (unless you use peanut butter that has sugar in it). It has a good crunch. It’s very quick and easy to make; in fact, my 6-year-old can make it himself. And it tastes great.
To prepare it, simply wash the celery, and spread the peanut butter down the middle, so it fills up the trough. Then cut it into smaller pieces or simply eat the whole stalk one bite at a time.
If you don’t eat peanuts, you can easily substitute almond butter, cashew butter, pecan butter, walnut butter, Brazil nut butter, sunflower seed butter, pumpkin seed butter, or any of the other nut or seed butters you can find or make. It’s easily adaptable, and is still simple and delicious.
And for this week, it’s our snack of choice.
