If you’re looking for a way to incorporate more vegetables into your diet, or simply looking to lower the glycemic index of the foods that you’re consuming, this recipe is a great comfort-food inspired way to do both.
While it doesn’t taste exactly like mashed potatoes (it is, after all cauliflower), I’ve surprised many people by telling them that they were eating cauliflower. It’s a simple, easy-to-make recipe, and it tastes great.
Pureed Cauliflower “Mashed Potatoes” Recipe
Cauliflower
Olive Oil (or butter or ghee, if desired)
Salt
Pepper
Food processor
Steam cauliflower for about 30 minutes, or until it’s soft. While you may not want to cook cauliflower quite that long to eat it in it’s whole form, in this instance you want it to be soft enough that it will puree into a smooth texture with no crunchy bits.
Place steamed cauliflower in the food processor. Add olive oil (or butter), salt, and pepper to taste. Puree until smooth. In my food processor, I find that I have to stop and push down the cauliflower towards the blades periodically using a spatula. You may or may not have to do this with yours. You can also take advantage of having the food processor open to taste your puree and adjust the seasonings as necessary.
Remove the puree from the food processor and serve. You can eat it as it is (that’s how we normally eat it), or add gravy, cheese, or whatever else you’d normally add to mashed potatoes.
