Healthy Snack: Cucumbers with Soft Goat Cheese (Chevre)

This week’s healthy snack of choice is Sliced Cucumbers with Soft Goat Cheese. The goat cheese is loaded with healthy fats, as well as giving a nice tangy taste and creamy feel to the snack (For information on the health benefits of goat cheese, please see HERE). The cucumber is crunchy, juicy, and wonderfully refreshing. Together, these make a great combination, and the rounds are simple and quick to prepare.

 

In fact, they’re so simple my 6-year-old put this snack together himself while I was unloading the car after a trip to the market (and then kindly let me take a picture before he and his brother started eating). They’re fast, easy, healthy, and taste great. What more could you want?

 

Here’s how he made them:

 

Cucumbers with Soft Goat Cheese Recipe

1 Cucumber
Soft Goat Cheese

Peel the cucumber (or leave the skin on, if desired).

Slice the cucumber into rounds.

Spoon a dab of soft goat cheese onto the top of each cucumber round.

Serve and enjoy.
