I try to keep a supply of easy to grab healthy snacks in our refrigerator. We all, adults and kids included, do better when there’s something we like to eat that we can grab quickly when we need a snack. This week, I decided to make a chocolate variation on the Carob Fudge (recipe HERE) we often make. This version has a distinct dark chocolate flavor, but still contains a healthy assortment of raw nuts and seeds. We all think they’re fantastic.
Here’s how I made them:
Healthy Chocolate Nut Fudge Bars Recipe
1 cup Almonds
½ cup Cacao Powder
1 cup Sesame Seeds
1 cup Shredded Coconut
1 cup Pumpkin Seeds
1 tablespoon Ground Vanilla Beans (read about them HERE)
¼ teaspoon Salt
¼ cup Coconut Oil, melted, plus additional for greasing pan
1 cup Peanut Butter
¾ cup Honey
Place almonds, cacao, sesame seeds, coconut, pumpkin seeds, and vanilla in a food processor. Process until all nuts and seeds are in uniform small bits.
Add coconut oil and peanut butter, and process until combined.
Add honey, and process until combined.
Spread into a coconut-oil greased baking pan.
Refrigerate until solid.
Cut into squares. Serve and enjoy.
NOTE: All of the nuts and seeds I used in this recipe were raw and unsalted. You can use roasted and salted nuts, but will get a slightly different taste and texture.
