Grain-Free Spiced Plum CakeWe have bag of plums, which were available unusually late in the season at our local farmer’s market last week. While we enjoyed many of them straight out of the bag (see HERE), I decided to make something special with the rest.

 

I came across this recipe for a Spiced Plum Cake at Gutsy By Nature months ago, and haven’t yet taken the time to make it. This seemed like the perfect occasion.

 

I modified her recipe slightly (when do I not), and it turned out wonderfully. Here’s how I made it:

 

 

Grain-Free, Nut Free Spiced Plum Cake

1 pound plums, pitted and halved (or quartered if your plums are larger)
¼ cup Coconut Flour
½ teaspoon Salt
1 ½ teaspoons Apple Pie Spice (recipe HERE)
4 eggs
1 teaspoon Ground Vanilla Beans (you can read more about them HERE)
¼ cup Honey
¼ cup Coconut Oil, melted, plus additional for greasing pan

Grease a pie pan with coconut oil.

Place plums in a single layer on the bottom of the greased pan.

Mix together the coconut flour, salt, apple pie spice, and ground vanilla beans (using a stand mixer, hand mixer, or by hand).

Combine the eggs, honey, and coconut oil, and mix into the dry ingredients until thoroughly combined.

Pour the batter evenly over the plums.

Place the filled pie pan in a preheated 375-degree oven, and bake until a toothpick inserted in the center comes out clean, about 35 minutes.

Allow the cake to cool for 10-20 minutes before slicing and serving.

This cake is wonderful when eaten warm.
