Fruit-Sweetened Tropical Temptation Ice CreamAnother hot summer afternoon led us to again pull out our ice cream maker. This time, I wanted something fruity and tropical. So we pulled out a bunch of tropical, as well as some not-so-tropical, ingredients and whipped up this batch of cold, fruit-sweetened deliciousness. My 2-year-old asked for “More Yummy” when his ice cream was gone. That pretty much sums it up.

 

Here’s how I made it:

 

Fruit-Sweetened Tropical Temptation Ice Cream

¼ cup diced Mango
¼ cup diced Pineapple
¼ cup Strawberries
¼ cup sliced Peaches
2 Bananas
3 Date Rolls (about 6 dates, pits removed)
1 teaspoon Ground Vanilla Beans (you can read about them HERE)
¼ teaspoon Salt
½ cup Cashew Butter
2 cups Milk (coconut milk works well for this, but any type will do).

Puree fruits in a food processor or blender until mixed.

Add spices and mix again.

Add cashew butter, and pulse until combined.

Add milk, and puree until smooth.

Process in an ice cream maker until your desired consistency is reached.

Serve and enjoy.

    What kind of ice cream maker do you use? And are you happy with it?

    • My ice cream maker is a Cuisinart. It’s very simple and works well. We put the bowl (which you freeze) back in the freezer immediately after washing, so we generally have it ready to go.

      I received the ice cream maker as a gift well over a decade ago. Because I didn’t buy it, I didn’t research other options at the time (and haven’t looked into any since then since I’m not planning to replace it). That said, I’ve been happy with it.
