What do you do when your kids are asking for spur of the moment ice cream? Find a way to make it with whatever you have on hand, of course. We had no cream in the house, so this is more of an Ice Milk recipe, but we call anything that’s a frozen ice-cream-like dessert ice cream in our house.
I try to keep our sugar consumption low, so this ice cream is entirely sweetened with fruit.
Easy Banana Ice Cream Recipe
1 quart milk (cow, nut milk, coconut, or whatever else you use)
3 bananas
1 teaspoon ground vanilla beans (you can read about it HERE)
¼ teaspoon salt
Puree all ingredients in a food processor until smooth.
Place puree into an ice cream maker and process until frozen.
Serve and enjoy.
NOTES: If you want your ice cream to be a bit sweeter, try adding a tablespoon or two of maple syrup or a dropper of stevia. We found it to be plenty sweet without any added sweetener.
