Having a child with food allergies can be tough. At home, we’re used to it. We simply avoid all foods that trigger problems. When we’re at someone else’s house, or the rare time we eat at a restaurant, things become more complicated; our restrictions are tough to ask of someone else.
One of the most difficult things for my son as he’s grown older has been the issue of treats, especially when we’re at a gathering or party and every child but he is eating a treat of some kind. As a result, I’ve developed a variety of recipes that both taste great and fit within the parameters of our food restrictions. And while I wouldn’t call these cookies healthy (after all, they have added sweetener), with an almond butter base, they are certainly more nutritive than a standard chocolate chip cookie.
The picture isn’t great. For some reason all of my shots came out looking odd. But these cookies taste great, even for those who can eat all types of treats without fear of an allergic reaction.
In any case, try these cookies; you won’t regret it.
Ingredients
- 1 cup Almond Butter
- 1/2 - 3/4 cup Coconut Sugar
- 1 Egg
- 1/4 teaspoon Salt
- 1/3 cup Chocolate Chips
- 1 tablespoon Ground Vanilla Beans
Instructions
- Preheat oven to 350.
- Mix all ingredients together, adding the chocolate chips last.
- Drop rounded spoonfuls on parchment-lined cookie sheet.
- Bake for 12 minutes.
- Let cool completely before removing from cookie sheet, or the cookies will crumble apart.
Almond Butter Chocolate Chip Cookies
1 cup Almond Butter

- Mix all ingredients together (I used my hand mixer), adding the chocolate chips last.
- Drop rounded spoonfuls on parchment-lined cookie sheet.
- Bake for 12 minutes.
- Let cool completely before removing from cookie sheet, or the cookies will crumble apart.
