4-Ingredient Healthy Donuts (Paleo, GAPS, Grain-Free, Dairy-Free, Gluten-Free)

My 9-year-old son has started making us dinner once a week.  Last week, he decided that he wanted to make donuts for dessert to go along with his meal.  Since my boys have never had a donut, this was a very exciting prospect for both of them.

 

Together, my 9-year-old and I came up with this recipe.  (We modified it from another recipe I jotted down years ago – unfortunately, I don’t know its original origins).

 

The donuts are easy to make and tasted great.  They are composed of very simple, clean ingredients.  They’re grain-free, dairy-free, gluten-free, and refined sugar-free.  They’re Paleo and GAPS compliant.  These donuts are lightly sweetened, so they’re not over-the-top sweet like most donuts.  They’re baked instead of fried.  For us, they are perfect cake donuts.

 

Next time we make them, my son wants to experiment with topping them.  But if you want a simple, healthy, cake donut – or a great base for whatever toppings you choose, this is great way to go.  Here’s how we made them:

 

 

4-Ingredient Healthy Donuts

1 cup almond flour
3 tablespoons maple syrup (or honey)
2 eggs
2 teaspoons ground vanilla beans (or vanilla extract)
Coconut oil or ghee, for greasing pan
Donut pan

Mix all ingredients until thoroughly combined.  I used my stand mixer, but a hand mixer or a wooden spoon would also work.

Pour the mixture into a well-greased donut pan.  (The above perfectly recipe filled one 6-donut pan).

Put the pan into a pre-heated 300-degree oven.  Bake for 12-15 minutes, taking them out as soon as they’re cooked and a toothpick inserted into the middle comes out clean.

Allow the donuts to cool completely before removing them from the pan.

Serve and enjoy.
